  • 1/2 cup (100g) granulated sugar
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 teaspoon salt
  • 3 large eggs, at room temperature
  • 1/2 cup (120ml) whole milk, warmed to about 110°F (43°C)
  • 1/2 cup (115g) unsalted butter, softened and cut into small pieces
  • 1 egg (for egg wash)
  • 1/4 cup (60ml) honey
  • 2 tablespoons (30g) unsalted butter
  • 1 tablespoon (15ml) water

Instructions

  1. In a small bowl, combine the warm milk and active dry yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour, sugar, and salt until combined.
  3. Add the frothy yeast mixture to the dry ingredients, followed by the eggs. Mix with a wooden spoon or a stand mixer fitted with a dough hook on low speed until a shaggy dough forms.
  4. Gradually add the softened butter, one piece at a time, mixing until fully incorporated. Knead for about 5 minutes until the dough is smooth and slightly sticky.
  5. Cover the bowl with plastic wrap or a damp kitchen towel and let the dough rise in a warm area for about 1 to 1.5 hours, or until it has doubled in size.
  6. Once risen, gently punch down the dough to release the air. Turn it out onto a lightly floured surface and divide it into 12 equal pieces, about 3 ounces each. Roll each piece into a ball.
  7. Place the dough balls in a greased 9×13-inch baking dish, leaving a little space between each for rising. Cover with a towel and let them rise for another 30-45 minutes until puffy.
  8. Preheat the oven to 350°F (175°C). Beat the remaining egg in a small bowl to create an egg wash. Brush the tops of the rolls gently with the egg wash.
  9. Bake the rolls for 20-25 minutes or until they are golden brown on top.
  10. While the rolls are baking, prepare the honey glaze by melting the butter in a small saucepan over low heat. Stir in the honey and water until smooth.
  11. As soon as the rolls come out of the oven, brush them generously with the honey glaze.
