Shrimp Lobster Cheddar Bay Biscuit Pot Pie Delight

Indulge in a comforting Shrimp Lobster Cheddar Bay Biscuit Pot Pie that combines succulent seafood with a rich, creamy filling. Topped with golden, flaky Cheddar Bay biscuits, this dish is perfect for any special occasion or cozy family dinner.

Ingredients

  • Large peeled and deveined shrimp
  • Fresh lobster meat (or crab meat as a substitute)
  • Cheddar Bay Biscuit mix (or homemade using all-purpose flour, baking powder, shredded cheddar cheese, and buttermilk)
  • Carrots
  • Peas
  • Celery
  • Seafood broth (or chicken broth, or vegetable broth as a non-seafood option)
  • Heavy cream (or half-and-half or plant-based cream as a substitute)
  • Butter
  • Diced onions
  • Flour
  • Salt
  • Pepper
  • Old Bay seasoning (optional)
  • Cayenne pepper or crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven according to the instructions on the Cheddar Bay Biscuit mix. Prepare the dough and place the biscuits on a baking sheet, then bake until golden brown. Set aside.
  2. In a large skillet, melt some butter over medium heat. Add diced onions, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the shrimp and lobster (or crab). Cook until the shrimp turns pink, about 3-4 minutes. Be careful not to overcook!
  4. Sprinkle flour over the seafood and vegetables, stirring constantly for about a minute. Gradually pour in the seafood broth and heavy cream, stirring until the mixture thickens. Season with salt, pepper, and your favorite seasonings, such as Old Bay seasoning for that classic seafood flavor.
  5. Once the sauce is thickened, stir in the peas. Remove from heat and transfer the mixture to a baking dish.
  6. Place the baked Cheddar Bay Biscuits on top of the seafood filling in the baking dish. You can leave some space between biscuits for even more crispy edges!
  7. Return the pot pie to the oven and bake for an additional 15-20 minutes, or until the biscuits are golden brown and the filling is bubbling.
  8. Let the pot pie sit for a few minutes before serving. This allows the filling to set a bit, making it easier to scoop. Enjoy your delicious creation!
