Ingredients

Scale
  • 2 ripe pears, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1 tablespoon balsamic vinegar
  • 1 pre-made flatbread or pizza dough
  • 1 cup goat cheese, crumbled
  • 1/2 cup arugula or spinach
  • 1/4 cup walnuts, chopped (optional)
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine sliced pears, olive oil, honey, cinnamon, balsamic vinegar, and a pinch of salt and pepper. Toss until pears are well coated.
  3. Spread the coated pear slices on a baking sheet lined with parchment paper in a single layer.
  4. Roast pears in the preheated oven for 20-25 minutes, stirring halfway through, until tender and caramelized.
  5. If using pizza dough, roll it out on a floured surface to about 1/4 inch thick. If using pre-made flatbread, skip this step.
  6. Place the rolled-out dough or flatbread on a baking sheet or pizza stone. Brush with olive oil if desired.
  7. Once pears are done roasting, let them cool slightly.
  8. Preheat your oven to 425°F (220°C).
  9. Spread crumbled goat cheese evenly over the flatbread.
  10. Layer roasted pear slices over the goat cheese.
  11. If using, sprinkle walnuts on top.
  12. Add a handful of arugula or spinach on top.
  13. Bake the assembled flatbread in the preheated oven for 10-15 minutes, until edges are golden brown and cheese is slightly melted.
  14. Remove from the oven and let cool for a couple of minutes before slicing.
  15. Drizzle with extra honey or balsamic vinegar if desired, and garnish with fresh thyme leaves.
  16. Slice into wedges and serve warm. Enjoy!

Notes

  • This flatbread pairs wonderfully with a light salad for a complete meal.
  • Leftovers can be stored in an airtight container in the fridge and reheated in the oven for a few minutes to restore crispiness.
