  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lime
  • 1 ripe mango, diced (about 1 cup)
  • ½ red bell pepper, diced
  • ¼ red onion, finely chopped
  • 1 jalapeño, seeds removed and finely chopped (optional, for heat)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 carrot, grated
  • ¼ cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • Lime wedges, for serving
  • Extra cilantro, for garnish (optional)

Instructions

  1. In a medium bowl, combine the olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, black pepper, and lime juice. Add the chicken breasts, ensuring they are well coated. Let them marinate for about 10 minutes while you prepare the other components.
  2. Heat a skillet over medium-high heat. Once hot, add the marinated chicken breasts. Cook for 6-7 minutes on each side, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). Avoid overcrowding the pan, as this will steam the chicken instead of searing it.
  3. While the chicken is cooking, prepare the mango salsa. In a bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and a pinch of salt. Stir gently to combine, and set aside to allow the flavors to meld.
  4. In another bowl, mix together the green cabbage, red cabbage, and grated carrot. In a small bowl, whisk together the mayonnaise, lime juice, honey, salt, and pepper. Pour the dressing over the cabbage and carrots, and toss until everything is evenly coated.
  5. Heat the corn or flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable. Keep them warm by wrapping them in a clean kitchen towel.
  6. When the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Then, slice the chicken into thin strips for easy assembly.
  7. To assemble each taco, place a few slices of chicken on a tortilla, top with mango salsa, and add a generous spoonful of lime slaw. Garnish with extra cilantro and serve with lime wedges on the side.
