  • 34 ripe pears, peeled, cored, and sliced
  • 100g chopped walnuts
  • 250g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • a pinch of salt
  • 125g unsalted butter, softened
  • 150g granulated sugar
  • 2 eggs
  • 100ml milk (or non-dairy alternative)
  • lemon juice (for tossing pears)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Grease a round cake pan (about 23 cm) with butter or line it with parchment paper.
  3. In a large bowl, combine 250g of all-purpose flour, 1 tsp of baking powder, 1 tsp of cinnamon, and a pinch of salt. Mix well and set aside.
  4. Peel, core, and slice 3-4 ripe pears. Toss them with a bit of lemon juice to prevent browning and set aside.
  5. In another large bowl, beat 125g of softened unsalted butter with 150g of sugar until light and fluffy, about 3-5 minutes.
  6. Add 2 eggs, one at a time, mixing well after each addition until fully incorporated.
  7. Gradually add the dry mixture to the butter mixture, alternating with 100ml of milk until everything is combined. Do not overmix!
  8. Gently fold in 100g of chopped walnuts and the sliced pears into the batter, distributing them evenly.
  9. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  10. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
