  • ¾ cup of granulated sugar
  • 2 large eggs

  • Zest of one orange
  • ¼ cup of fresh orange juice
  • 1 ½ cups of graham cracker crumbs
  • ½ cup of melted butter
  • ¼ cup of sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine 1 ½ cups of graham cracker crumbs with ½ cup of melted butter and ¼ cup of sugar. Mix until the crumbs are well coated. Press this mixture firmly into the bottom of a greased 9×9 inch baking pan. Bake for 10 minutes, then remove from the oven and let it cool slightly.
  3. In a large bowl, beat 16 ounces of softened cream cheese until smooth. Gradually add ¾ cup of sugar, mixing well. Add 2 large eggs, 1 teaspoon of vanilla extract, the zest of one orange, and ¼ cup of fresh orange juice. Beat until everything is well combined and creamy.
  4. Gently fold in 1 ½ cups of fresh cranberries into the cheesecake mixture.
  5. Pour the cheesecake mixture over the cooled crust, spreading it evenly. Bake in the preheated oven for 25-30 minutes or until the center is set and slightly jiggly.
  6. Once baked, let the bars cool at room temperature for about an hour. Then, refrigerate for at least 4 hours, or preferably overnight.
