  • 1 packet Taco Seasoning (or homemade with chili powder, cumin, garlic powder, and paprika)
  • 8 Flour or Corn Tortillas (or gluten-free tortillas or lettuce wraps)
  • 1 cup Shredded Cheese
  • 1 cup Diced Tomatoes
  • 1 Avocado
  • 1/2 cup Sour Cream
  • 1/4 cup Fresh Cilantro
  • 1 Bell Pepper, sliced
  • 1 Onion, sliced
  • Optional: Jalapeños, Olives, Salsa, Zucchini, Mushrooms

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula for about 5-7 minutes.
  3. Drain any excess fat and stir in the taco seasoning along with about ¼ cup of water. Let it simmer for a few minutes until thickened.
  4. Line a large sheet pan with parchment paper or lightly grease it. Spread the cooked beef evenly across the pan.
  5. Scatter sliced bell peppers and onions over the beef, adding any other veggies you enjoy.
  6. Place the sheet pan in the oven and bake for 15-20 minutes, or until the veggies are tender and slightly charred.
  7. While the filling is baking, warm your tortillas in a separate pan or in the microwave wrapped in a damp paper towel for about 30 seconds.
  8. Once the filling is ready, remove the sheet pan from the oven. Spoon the beef and vegetable mixture onto the warm tortillas and top with your favorite toppings.
