Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup honey
  • 1 large egg
  • flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt. Set this aside.
  3. In a large mixing bowl, beat 1 cup of softened unsalted butter with ¾ cup of granulated sugar until it’s light and fluffy, about 3-4 minutes.
  4. Pour in ½ cup of honey and add 1 large egg. Mix until everything is well combined.
  5. Gradually add the dry mixture to the wet mixture, mixing just until combined. Be careful not to overmix!
  6. Cover the dough and chill it in the refrigerator for at least 30 minutes.
  7. Once chilled, use a cookie scoop or tablespoon to portion out the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  8. Before baking, lightly sprinkle the tops of the cookies with flaky sea salt.
  9. Place the baking sheet in the oven and bake for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked.
  10. Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
