Ingredients

  • Breakfast sausage (or ground turkey/beef sausage)
  • Pancake mix (or flour, baking powder, sugar, and salt for from-scratch)
  • Whole milk (or almond/oat milk for dairy-free)
  • Eggs (or flax eggs for vegan option)
  • Shredded cheddar or mozzarella cheese (or any cheese of choice)
  • Maple syrup (or sugar-free syrup/honey)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, crumble and brown the sausage until it’s fully cooked. Drain any excess grease and set aside.
  3. In a large bowl, combine the pancake mix, milk, and eggs. Stir until just combined; a few lumps are okay.
  4. Grease a 9×13 inch baking dish. Pour half of the pancake batter into the dish, spreading it evenly.
  5. Sprinkle the cooked sausage over the batter and add a layer of cheese on top.
  6. Pour the rest of the pancake batter over the sausage and cheese, covering it completely.
  7. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Once baked, let the casserole cool for a few minutes. Drizzle with maple syrup before slicing into squares and serving warm.
