Delicious Fresh Apple Cake with Cream Cheese Frosting Recipe

  • 2 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of ground cinnamon

  • 1/2 cup of softened butter
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 cup of buttermilk or milk
  • 1/2 cup of chopped walnuts or pecans (optional)
  • 8 oz of softened cream cheese
  • 1/4 cup of softened butter (for frosting)
  • 2 cups of powdered sugar (for frosting)
  • 1 teaspoon of vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. Peel, core, and chop your apples into small pieces. If you like, you can toss them in a little lemon juice to prevent browning.
  3. In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground cinnamon, 1/2 teaspoon of nutmeg, and a pinch of salt. Set aside.
  4. In another bowl, beat together 1/2 cup of softened butter and 1 cup of granulated sugar until light and fluffy. This should take about 3-5 minutes.
  5. Add 2 large eggs one at a time, mixing well after each addition, followed by 1 teaspoon of vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup of buttermilk or milk, mixing until just combined. Don’t overmix!
  7. Gently fold in the chopped apples and 1/2 cup of chopped walnuts or pecans if using.
  8. Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  9. Once baked, let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  10. While the cake cools, beat together 8 oz of softened cream cheese, 1/4 cup of softened butter, 2 cups of powdered sugar, and 1 teaspoon of vanilla extract until creamy and smooth.
  11. Once the cake is completely cool, spread the cream cheese frosting evenly on top. Feel free to sprinkle additional chopped nuts on top for decoration!
