  • 1 sheet puff pastry or pie crust
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon thyme
  • 1 teaspoon parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a skillet over medium heat, add a splash of olive oil. Season the chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side until golden and cooked through. Remove and let cool, then chop into bite-sized pieces.
  3. In the same skillet, add a little more oil if needed and sauté chopped onions, carrots, and any other desired vegetables for about 5 minutes until they are just tender.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring this mixture to a gentle simmer, allowing it to thicken for about 5 minutes.
  5. Stir the chopped chicken back into the skillet, season with thyme, parsley, salt, and pepper to taste. Remove from heat and set aside.
  6. Roll out your puff pastry or pie crust and fit it into a pie dish. Pour the creamy chicken mixture into the crust, then cover with another layer of pastry. Trim and crimp the edges to seal.
  7. Cut a few slits in the top crust to allow steam to escape while baking.
  8. Place the pot pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and crispy.
