Ingredients

Scale
  • 4 salmon fillets (about 6 ounces each)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 red bell pepper, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, garlic powder, smoked paprika, and cayenne pepper (if using).
  2. In a large skillet, heat olive oil over medium-high heat until shimmering.
  3. Place the salmon fillets skin-side down in the skillet. Cook undisturbed for 4-5 minutes until the edges are golden brown and the fish is cooked halfway up the sides.
  4. Carefully flip the salmon using a spatula. Cook for an additional 3-4 minutes until cooked through and flakes easily. Remove from skillet and cover loosely with foil.
  5. In the same skillet, add chopped red bell pepper, onion, and minced garlic. Sauté for 5-7 minutes until softened and fragrant.
  6. Pour in vegetable broth, scraping the bottom of the skillet to deglaze and incorporate flavors.
  7. Stir in balsamic vinegar and honey (or maple syrup). Simmer for about 5 minutes to reduce slightly.
  8. Transfer the mixture to a blender or use an immersion blender to blend until smooth. For a chunkier sauce, skip this step.
  9. Taste the sauce and adjust seasoning with salt, pepper, or more vinegar. Add fresh lemon juice to brighten flavors.
  10. Place a salmon fillet on a serving plate.
  11. Spoon the red pepper sauce generously over the salmon, allowing some to pool around the fish.
  12. Sprinkle with freshly chopped parsley for color and freshness.

Notes

  • Serving Suggestions: This dish pairs well with roasted vegetables, quinoa, or a fresh green salad. For a heartier meal, serve over creamy mashed potatoes or rice.
  • Storage Tips: Store leftovers separately in airtight containers. Salmon is best eaten within 2 days; the sauce can last up to a week.
