Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent and fragrant.
  2. Add the minced garlic and cook for an additional 30 seconds, stirring frequently to avoid burning.
  3. Incorporate the shredded chicken, cooked rice, chicken broth, and heavy cream into the skillet. Stir well to combine all ingredients, ensuring everything is evenly coated.
  4. Season the mixture with dried thyme, paprika, salt, and black pepper. Let it simmer for about 5-7 minutes, stirring occasionally, until the mixture thickens slightly and is heated through.
  5. Once thickened, remove the skillet from heat and fold in the shredded cheddar cheese and thawed peas and carrots. Stir until the cheese is fully melted and the filling is creamy.
  6. While the filling cools slightly, preheat your oven to 350°F (175°C).
  7. Prepare the slider buns by cutting them in half horizontally. Place the bottom halves of the buns on a baking sheet lined with parchment paper.
