Cranberry Orange Chicken Dish: A Delicious Recipe for Your Next Meal

Tender chicken breasts marinated in a zesty orange and honey mixture, baked to perfection, and topped with a homemade cranberry sauce. This dish offers a delightful balance of sweet and tart flavors, making it a perfect centerpiece for any dinner table.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice (freshly squeezed is best)
  • 1 tablespoon orange zest
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium bowl, combine the orange juice, orange zest, honey, minced garlic, grated ginger, salt, black pepper, dried thyme, and red pepper flakes (if using). Whisk until the honey is fully dissolved.
  2. Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap.
  3. Refrigerate for at least 1 hour, preferably 4 hours or overnight for enhanced flavor.
  4. In a medium saucepan, add the cranberries and 1/2 cup of the remaining orange juice from the marinade.
  5. Bring to a boil over medium heat, then reduce to low and simmer for 10-15 minutes, stirring occasionally until the cranberries burst and the sauce thickens.
  6. Stir in 1 tablespoon of honey (adjust to taste) and remove from heat. Set aside to cool slightly.
  7. Preheat your oven to 375°F (190°C).
  8. In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the chicken from the marinade (discard the marinade) and place in the skillet.
  9. Sear the chicken for 3-4 minutes on each side until golden brown.
  10. Pour the prepared cranberry sauce over the chicken in the skillet.
  11. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  12. For a caramelized finish, broil for an additional 2-3 minutes, watching closely to prevent burning.
  13. Remove the skillet from the oven and let the chicken rest for 5 minutes.
  14. Serve each chicken breast on a plate and spoon cranberry sauce over the top.
  15. Garnish with freshly chopped parsley.
