Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ¾ cup water
  • 2 tablespoons olive oil
  • 2 cups green cabbage, finely shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef (or ground turkey for a lighter option)
  • 1 cup cooked rice (white or brown)
  • 1 can (15 ounces) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by making the flatbread base. In a large mixing bowl, combine 2 cups all-purpose flour, 1 teaspoon salt, and 1 teaspoon baking powder. Mix well until evenly combined.
  2. Gradually add in ¾ cup water and 2 tablespoons olive oil. Stir with a wooden spoon until a dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time.
  3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. Look for a dough that springs back when you poke it, which indicates it's ready!
  4. While the dough rests, prepare the cabbage roll topping. Heat a large skillet over medium heat. Add 1 pound of ground beef (or turkey) and cook until browned, about 5-7 minutes, breaking it apart with a spatula. Avoid overcrowding the pan, which can steam the meat instead of browning it.
  5. Once the meat is cooked, add 1 medium diced onion and 2 minced garlic cloves to the skillet. Sauté for another 3-4 minutes until the onions are translucent.
  6. Stir in 2 cups finely shredded green cabbage, 1 cup cooked rice, 1 can of tomato sauce, 1 teaspoon dried oregano, 1 teaspoon dried thyme, ½ teaspoon paprika, and salt and pepper to taste. Cook for about 5-7 minutes until the cabbage is tender but still has a slight crunch.
  7. Preheat your oven to 450°F (230°C). While it heats, roll out the flatbread dough into a large rectangle or circle, about ¼ inch thick. Transfer the dough to a baking sheet lined with parchment paper.
  8. Spoon the cabbage roll mixture evenly over the flatbread, then sprinkle 1 cup of shredded mozzarella cheese on top. Make sure to spread the toppings out to avoid sogginess.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges of the flatbread are golden brown and the cheese is bubbly and slightly browned. Keep an eye on it to avoid burning!
  10. Once done, remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before slicing and serving. Enjoy your delicious Cabbage Roll Flatbread Pizza!

Keywords: Be careful not to over-knead the flatbread dough; it should be soft and pliable, not tough. Knead just until smooth for the best texture. Use a pizza stone if available; it helps create a crispier flatbread base by distributing heat evenly.
