Instructions

  1. Wash the bok choy thoroughly under cold running water to remove any dirt or grit. Chop the bok choy into bite-sized pieces, separating the white stems from the leafy greens.
  2. Slice the mushrooms into thin pieces, removing tough stems if using shiitake mushrooms.
  3. Peel and thinly slice the onion. Mince the garlic cloves and grate the fresh ginger.
  4. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  5. Add the sliced onions to the skillet and sauté for about 2-3 minutes until translucent and fragrant.
  6. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes, being careful not to burn the garlic.
  7. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, until tender and moisture is released.
  8. Add the chopped bok choy stems to the skillet and cook for about 2-3 minutes.
  9. Once the stems have softened, add the bok choy leaves and stir-fry for another 2-3 minutes until wilted but vibrant green.
  10. Pour the soy sauce and oyster sauce (if using) over the vegetables, stirring to coat.
  11. For a thicker sauce, mix the cornstarch with water until smooth, then pour into the skillet while stirring continuously.
  12. Season with salt and pepper to taste, keeping in mind the saltiness of the soy sauce.
