  • Sourdough or rustic country loaf bread
  • Sharp cheddar cheese
  • Creamy mozzarella cheese

Instructions

  1. Slice the onions thinly.
  2. In a large skillet over medium heat, melt 1 tablespoon of butter.
  3. Add the onions and a pinch of salt, cooking slowly for 20-30 minutes until golden brown and sweet.
  4. In a separate skillet, cook 6-8 slices of beef bacon until crispy, about 5-7 minutes per side.
  5. Place the cooked bacon on a paper towel to absorb excess grease.
  6. Take two slices of bread and butter one side of each.
  7. On the unbuttered side, layer a slice of cheddar cheese, followed by caramelized onions, beef bacon, and another slice of cheese.
  8. Top with the second slice of bread, buttered side up.
  9. Heat a skillet or griddle over medium heat and place the sandwiches in the skillet.
  10. Cook for about 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until the other side is golden and the cheese has melted.
  11. Remove the sandwiches from the pan and let them sit for a minute before slicing in half.
