  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a kick)
  • 1 tablespoon olive oil
  • Cooking spray (for greasing the baking sheet)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bring a pot of water to a boil. Add the chopped broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and transfer to a bowl of ice water to stop cooking. Drain again and pat dry.
  3. In a large mixing bowl, combine the blanched broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, and flour.
  4. In a separate bowl, whisk the eggs and add minced garlic, onion powder, salt, black pepper, and red pepper flakes (if using). Mix well.
  5. Pour the egg mixture into the broccoli mixture and combine until sticky but holds together. Adjust with more breadcrumbs or flour if too wet.
  6. Shape the mixture into 1.5-inch balls, packing them tightly.
  7. Place the balls on a parchment-lined baking sheet, leaving space between each.
  8. Drizzle or spray lightly with olive oil.
  9. Bake for 20-25 minutes, flipping halfway through for even browning.
  10. Remove from the oven and let cool for a few minutes before serving.
  11. Serve warm with your favorite dipping sauce, such as marinara or ranch dressing.
