Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until the crumbs resemble wet sand.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake the crust for 8-10 minutes until lightly golden. Let it cool.
  5. Melt the chopped white chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  6. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and mix well.
  7. Add vanilla extract and mix again.
  8. Add eggs one at a time, mixing on low speed after each addition.
  9. Mix in sour cream and melted white chocolate until smooth.
  10. Pour the cheesecake filling over the cooled crust and spread evenly.
