Ingredients

  • all-butter puff pastry
  • fresh goat cheese / chèvre
  • honey
  • toasted walnuts

  • flaky sea salt
  • extra virgin olive oil
  • fig jam (optional)
  • balsamic glaze (optional)
  • red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If using frozen puff pastry, ensure it’s fully thawed according to the package instructions. Carefully unroll it onto a lightly floured surface or a piece of parchment paper.
  3. Using a small round cutter (about 1.5 to 2 inches in diameter) or a sharp knife, cut out as many rounds or squares as you can.
  4. Place the puff pastry shapes onto a baking sheet lined with parchment paper. Gently prick the center of each piece a couple of times with a fork.
  5. Bake for 10-15 minutes, or until the pastry is beautifully golden brown and lightly puffed. Keep a close eye on them as ovens can vary.
  6. Once baked, remove from the oven and let them cool completely on a wire rack.
  7. While the pastry bakes or cools, toast your chosen nuts (walnuts, pecans, or pistachios) in a dry skillet over medium heat, stirring frequently, for 3-5 minutes until fragrant, or spread them on a small baking sheet and toast in the preheated oven for 5-7 minutes. Let them cool, then roughly chop them.
  8. If your goat cheese is very firm, let it sit at room temperature for about 15-20 minutes to soften slightly.
  9. Once your puff pastry bases are completely cool, take each pastry round and gently spread or pipe a generous dollop of the softened goat cheese onto the center.
  10. Artfully drizzle a good amount of honey over the goat cheese.
  11. Sprinkle the toasted, chopped nuts over the honey and goat cheese.
  12. Garnish each bite with a few fresh thyme leaves or a tiny sprig of rosemary.
  13. Finish with a tiny pinch of flaky sea salt on each bite.
  14. Arrange your Goat Cheese and Honey Bites on a beautiful platter and serve immediately, or at room temperature.
