This Broccoli Cheese Rice Casserole is a warm, cheesy, and creamy delight that combines tender broccoli, fluffy rice, and rich cheese. It’s a fantastic way to sneak in some veggies while indulging in cheesy comforts.

Ingredients

  • Fresh broccoli florets or frozen broccoli (thawed and drained)
  • Long-grain white rice (or brown rice or quinoa as substitutes)
  • Sharp cheddar cheese
  • Cream cheese
  • Cream of mushroom soup (or cream of broccoli soup as a substitute)
  • Chopped onions (or garlic as a substitute)
  • Salt
  • Pepper
  • Garlic powder
  • Paprika (optional)
  • Cayenne (optional)
  • Butter (or olive oil as a substitute)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, prepare the rice according to package instructions. Once cooked, set it aside.
  3. If using fresh broccoli, steam it for about 3-4 minutes until slightly tender. If using frozen, ensure it’s thawed and drained.
  4. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes.
  5. Stir in the cream of mushroom soup and mix well with the onions, letting it cook for another 2-3 minutes.
  6. Add the cream cheese and half of the shredded cheddar to the mixture, stirring until melted and well combined.
  7. In a large mixing bowl, combine the cooked rice, steamed broccoli, and the cheese mixture. Mix until everything is evenly coated.
  8. Pour the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  9. Sprinkle the remaining cheddar cheese on top and if you like, add some breadcrumbs for a crunchy topping.
  10. Place the casserole in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden.
  11. Once out of the oven, let it cool for a few minutes before serving.
