Instructions

  1. Prepare your ingredients: Lay out all your ingredients: bread, cheese slices, beef bacon, eggs, and butter/oil. Grate your cheese if you're not using pre-sliced, as it melts more evenly. Take your butter out of the fridge a few minutes before you start so it can soften slightly, making it easier to spread.
  2. Cook the beef bacon: Heat a large non-stick skillet or frying pan over medium heat. Add your beef bacon strips to the pan in a single layer. Don't overcrowd the pan; cook in batches if necessary. Cook for about 5-8 minutes, flipping occasionally, until it reaches your desired level of crispiness. Once cooked, remove the beef bacon from the pan and place it on a plate lined with paper towels to drain any excess fat. Keep the skillet on the stove; we'll use it for the egg and the sandwich.
  3. Fry the egg: Reduce the heat to medium-low. If there's too much bacon fat, you can drain some, leaving about a teaspoon in the pan, or add a little fresh oil or butter if needed. Carefully crack an egg directly into the pan. Cook the egg to your preference. For a runny yolk, cook sunny-side up for about 2-3 minutes, until the whites are set but the yolk is still liquid. For over-easy, flip carefully and cook for another 30 seconds. Season the egg with a pinch of salt and black pepper while it's cooking. Once cooked, gently remove the fried egg from the pan and set it aside.
  4. Assemble the grilled cheese: Butter one side of each slice of bread generously. Place one slice of bread, butter-side down, in the same skillet. Layer half of your cheese slices on top of the bread. Carefully place your cooked beef bacon on the cheese. Next, gently place your fried egg on top of the beef bacon. Finish with the remaining cheese slices, ensuring the egg is nestled between layers of melting cheese. Place the second slice of bread on top, butter-side up.
  5. Grill the sandwich to golden perfection: Return the skillet with the assembled sandwich to medium-low heat. Cook for 3-5 minutes per side, or until the bread is deeply golden brown and the cheese is beautifully melted and gooey. Gently press down on the sandwich with a spatula occasionally to ensure even contact with the pan and help the cheese melt. Use a wide spatula to carefully flip the sandwich to cook the second side.
  6. Serve immediately: Once both sides are golden and the cheese is fully melted, transfer the sandwich to a cutting board. Slice it in half, revealing that glorious cross-section of egg, beef bacon, and melted cheese. Serve piping hot and enjoy!
