Ingredients

Scale
  • 2 lbs (approx. 1 kg) waxy or all-purpose potatoes
  • 1 cup fresh flat-leaf parsley, finely chopped
  • 1/2 cup fresh dill, finely chopped
  • 1/4 cup fresh mint, finely chopped (optional)
  • 45 spring onions, thinly sliced
  • 1/2 small red onion, finely minced (optional)
  • 1 medium red bell pepper, deseeded and finely diced
  • 2 firm, ripe medium tomatoes, deseeded and finely diced
  • 1/2 cup pitted black olives, halved
  • 1/2 cup extra virgin olive oil
  • Juice of 12 large lemons
  • 12 tablespoons sumac
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Wash the potatoes thoroughly. You can peel them before boiling or boil them with their skin on.
  2. Place the potatoes in a large pot and cover them with cold, salted water by about an inch. Bring to a boil over medium-high heat, then reduce the heat to a simmer.
  3. Cook until the potatoes are fork-tender but not mushy, typically 15-25 minutes depending on their size.
  4. Once cooked, drain the potatoes well and let them cool slightly. If boiled with skins on, peel them carefully while still warm.
  5. Cut the potatoes into approximately 3/4 to 1-inch cubes and set them aside in a large mixing bowl.
  6. While the potatoes are cooking and cooling, prepare your fresh ingredients: finely chop the parsley, dill, and mint (if using), thinly slice the spring onions, deseed and finely dice the red bell pepper and tomatoes, and halve the olives.
  7. Add all the chopped vegetables and herbs to the bowl with the cubed potatoes.
  8. In a small bowl, whisk together the olive oil, lemon juice, sumac, red pepper flakes, salt, and black pepper.
  9. Taste the dressing and adjust seasonings if necessary.
  10. Pour the prepared dressing over the potatoes, vegetables, and herbs in the large mixing bowl.
  11. Gently toss all the ingredients together to ensure everything is evenly coated with the dressing.
  12. Taste the salad and adjust any seasonings as needed.
  13. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  14. Before serving, give the salad another gentle toss and serve at room temperature or slightly chilled.

Keywords: Don't overcook your potatoes to maintain their texture. Letting the salad chill allows the flavors to meld beautifully. Adjust the tanginess and spice to your preference.
