  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 34 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease and flour a 9×13-inch sheet cake pan.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, light brown sugar, baking soda, and a pinch of salt until well combined.
  3. In a separate medium bowl, whisk together the room temperature eggs, vegetable oil, sour cream (or Greek yogurt), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Gently fold in the drained crushed pineapple and sweetened shredded coconut until evenly distributed.
  6. Pour the batter into the prepared sheet cake pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
