  • 1/2 teaspoon ground cinnamon
  • 4 slices of thick-cut bread (like sourdough or brioche)
  • 2 tablespoons unsalted butter
  • Fresh fruit for topping (such as berries, sliced peaches, or figs)
  • Chopped nuts (like pistachios or almonds) for garnish
  • Mint leaves for garnish (optional)

Instructions

  1. In a medium-sized mixing bowl, add 1 cup of fresh ricotta cheese.
  2. Drizzle in 2 tablespoons of honey.
  3. Pour in 1 teaspoon of vanilla extract.
  4. Sprinkle in 1/2 teaspoon of ground cinnamon.
  5. Mix everything together using a fork or whisk until well combined and creamy. Adjust sweetness with more honey if desired.
  6. Set the ricotta aside.
  7. Choose your favorite thick-cut bread (sourdough or brioche recommended).
  8. Heat a skillet over medium heat.
  9. Spread 1 tablespoon of unsalted butter on one side of each slice of bread.
  10. Place the slices of bread butter-side down in the skillet.
  11. Toast for about 3-4 minutes until golden brown and crispy, then flip and toast the other side for an additional 2-3 minutes.
  12. Remove the toasted bread and repeat with remaining slices.
  13. Spread a generous amount of the ricotta mixture on each slice of toasted bread.
  14. Add fresh fruit on top, arranging beautifully.
  15. Sprinkle chopped nuts over the fruit.
  16. Drizzle with extra honey for added sweetness.
  17. Optionally, add mint leaves for garnish.
  18. Repeat for remaining slices.
