4 slices of thick-cut bread (like sourdough or brioche)

Chopped nuts (like pistachios or almonds) for garnish
Mint leaves for garnish (optional)
Instructions
In a medium-sized mixing bowl, add 1 cup of fresh ricotta cheese.
Drizzle in 2 tablespoons of honey.
Pour in 1 teaspoon of vanilla extract.
Sprinkle in 1/2 teaspoon of ground cinnamon.
Mix everything together using a fork or whisk until well combined and creamy. Adjust sweetness with more honey if desired.
Set the ricotta aside.
Choose your favorite thick-cut bread (sourdough or brioche recommended).
Heat a skillet over medium heat.
Spread 1 tablespoon of unsalted butter on one side of each slice of bread.
Place the slices of bread butter-side down in the skillet.
Toast for about 3-4 minutes until golden brown and crispy, then flip and toast the other side for an additional 2-3 minutes.
Remove the toasted bread and repeat with remaining slices.
Spread a generous amount of the ricotta mixture on each slice of toasted bread.
