Spinach Feta Grilled Cheese: A Delicious Twist on a Classic Sandwich

  • 4 slices of whole grain bread
  • 1 cup fresh spinach, washed and roughly chopped
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: red pepper flakes for a bit of heat

Instructions

  1. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Toss in the chopped spinach and cook for about 2-3 minutes, stirring frequently, until wilted.
  3. Sprinkle a pinch of salt and pepper over the spinach. If desired, add red pepper flakes for heat. Stir well and remove from heat.
  4. In a mixing bowl, combine the sautéed spinach with crumbled feta and shredded mozzarella. Mix until well incorporated.
  5. Use whole grain bread for its nutty flavor, or substitute with sourdough or multigrain.
  6. Spread the remaining tablespoon of butter evenly on one side of each slice of bread.
  7. On the unbuttered side of two slices, generously spread the spinach and cheese mixture.
  8. Place the other two slices of bread on top, buttered side facing out.
  9. In the same skillet, add more olive oil if needed and heat over medium.
  10. Carefully place the sandwiches in the skillet. Cook for about 3-4 minutes on one side until golden brown.
  11. Gently flip the sandwiches and cook for another 3-4 minutes on the other side. Cover with a lid if cheese isn’t melting quickly.
  12. Once both sides are golden and cheese is melted, remove from skillet and place on a cutting board.
  13. Let cool for a minute before slicing in half.
  14. Sprinkle extra feta or red pepper flakes on top for added flavor.
  15. Serve with tomato soup or a fresh salad for a complete meal.
