Spicy Korean Ramen: A Flavorful Journey into Authentic Korean Cuisine

This Spicy Korean Ramen is a quick and delicious dish featuring instant noodles in a rich, spicy broth with fresh vegetables and optional egg. It’s customizable to your taste, making it perfect for a cozy meal. Enjoy it hot, garnished with sesame seeds, and pair it with kimchi for an authentic experience.

  • 2 packs of instant ramen noodles (preferably Korean brand)
  • 4 cups of water
  • 1 tablespoon of vegetable oil
  • 2 cloves of garlic, minced
  • 1 small onion, thinly sliced
  • 1 medium carrot, julienned
  • 1 cup of shiitake mushrooms, sliced
  • 1 cup of baby spinach
  • 2 green onions, chopped
  • 1 tablespoon of gochujang (Korean chili paste)
  • 1 tablespoon of gochugaru (Korean chili flakes)
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of sugar
  • 1 egg (optional)
  • Sesame seeds for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Once the oil is hot, add the minced garlic and sliced onion. Sauté for about 2-3 minutes until the onions become translucent and fragrant.
  2. Add the julienned carrot and sliced shiitake mushrooms to the pot. Stir-fry for another 3-4 minutes until the vegetables are slightly softened.
  3. Pour in 4 cups of water and bring it to a boil. Once boiling, reduce the heat to a simmer.
  4. Stir in the gochujang, gochugaru, soy sauce, sesame oil, and sugar. Mix well until the gochujang is fully dissolved into the broth. Let it simmer for about 5 minutes to allow the flavors to meld together.
  5. While the broth is simmering, take the ramen noodles and add them directly into the pot. Cook according to the package instructions, usually around 3-4 minutes. Stir occasionally to prevent the noodles from sticking together.
  6. In the last minute of cooking, add the baby spinach and chopped green onions to the pot.
  7. If you’re adding an egg, crack it directly into the pot during the last minute of cooking. Gently stir the broth to create a swirl, which will help the egg cook evenly and create beautiful ribbons of egg in your ramen.
  8. Once the noodles are cooked and the egg is set to your liking, turn off the heat. Carefully ladle the ramen into bowls, ensuring each bowl gets a good amount of broth and vegetables.
  9. Garnish each bowl with a sprinkle of sesame seeds for added texture and flavor.
  10. For an extra kick, you can drizzle a little more gochujang on top or add some sliced fresh chili peppers if you like it really spicy.
  11. Serve the spicy Korean ramen hot, and enjoy it with a side of kimchi for a traditional touch.
  12. If you have any leftover protein, such as grilled chicken or tofu, feel free to add it on top of your ramen for a heartier meal.
  13. Pair your ramen with a refreshing drink, like iced green tea or a light beer, to balance the spiciness.
  14. If you prefer a milder version, reduce the amount of gochujang and gochugaru to suit your taste.
  15. Feel free to add other vegetables like bok choy, bell peppers, or zucchini based on what you have on hand.
  16. For a vegan option, skip the egg and use vegetable broth instead of water for a deeper flavor.
  17. Experiment with different toppings such as nori (seaweed), pickled radish, or even a sprinkle of cheese for a unique twist.
  18. If you have any leftovers, store the ramen and broth separately in airtight containers to prevent the noodles from becoming mushy.
