Shrimp Macaroni Casserole: A Delicious and Easy Recipe for Seafood Lovers

A creamy shrimp macaroni casserole featuring sautéed vegetables and seasoned shrimp, all topped with a crispy breadcrumb crust. This comforting dish is perfect for family dinners or gatherings, offering a delightful blend of flavors in every bite.

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil

  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs (optional, for topping)
  • 2 tablespoons butter, melted (if using breadcrumbs)

Instructions

  1. Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente (7-8 minutes). Drain and rinse under cold water. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper; sauté for 3-4 minutes until softened.
  3. Add minced garlic and cook for 1 minute.
  4. Add shrimp and cook until pink and opaque (3-4 minutes).
  5. Stir in frozen peas and cook for another 2 minutes. Remove from heat.
  6. In a mixing bowl, combine cream of mushroom soup and milk; whisk until smooth.
  7. Add Old Bay seasoning, paprika, salt, and pepper. Adjust seasoning to taste.
  8. Fold in cooked macaroni, shrimp, and vegetable mixture until evenly coated.
  9. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  10. Pour the macaroni and shrimp mixture into the dish, spreading evenly.
  11. If using breadcrumbs, mix with melted butter and sprinkle over the top.
  12. Bake for 25-30 minutes until bubbly and golden brown. Cover with foil if browning too quickly.
  13. Let sit for 5-10 minutes before serving.
  14. Serve warm, garnished with parsley or additional Old Bay seasoning. Pairs well with a green salad or crusty bread.
