Ingredients

  • Thinly Sliced Roast Beef
  • Meltable Cheese (Provolone, Gruyere, or Swiss)
  • Sturdy Bread (Sourdough, Thick-Cut White Bread, or Texas Toast)
  • Caramelized Onions (1 large yellow onion)
  • Rich Au Jus (2 cups beef broth, ½ tsp Worcestershire or soy sauce, 1 crushed garlic clove, 1 bay leaf)
  • Butter (or Mayonnaise)

Instructions

  1. In a small saucepan, combine 2 cups beef broth, ½ tsp Worcestershire or soy sauce, a crushed garlic clove, and a bay leaf. Bring to a gentle simmer over medium-low heat and let it steep for 15-20 minutes. Keep warm over very low heat.
  2. Thinly slice one large yellow onion. In a medium skillet, melt 1 tbsp butter over medium-low heat. Add onions and a pinch of salt. Cook, stirring occasionally, for 25-35 minutes until deeply golden, soft, and sweet. Set aside.
  3. Spread softened butter or mayonnaise on one side of each bread slice. Place two slices butter-side down. Layer half the cheese (1-2 slices), then a generous amount of thinly sliced roast beef. Spoon caramelized onions over the beef, then top with the remaining cheese. Place the remaining buttered bread slices, butter-side up, on top.
  4. Heat a large skillet or griddle over medium-low heat. Carefully transfer sandwiches to the hot skillet. Cover the pan with a lid for a few minutes. Cook for 4-6 minutes per side, or until both sides are beautifully golden brown and the cheese is thoroughly melted and gooey. Press gently with a spatula occasionally.
  5. Remove from skillet, slice diagonally for easy dipping, and serve hot alongside individual bowls of your warm au jus. Dip generously and enjoy!
