Savory Air Fryer Garlic Butter Steak Bites with Potatoes

  • 1 to 1.5 pounds beef steak (sirloin, ribeye, or New York strip)
  • 1 to 1.5 pounds small waxy potatoes (baby red potatoes, Yukon Golds, or small creamer potatoes)
  • 1 tablespoon extra virgin olive oil (plus more for coating steak)
  • 46 cloves fresh garlic (finely minced)
  • 4 tablespoons unsalted butter
  • Sea salt (to taste)
  • Freshly ground black pepper (to taste)
  • Onion powder (to taste)
  • Paprika (to taste, smoked paprika recommended)
  • Dried Italian herbs (like rosemary, thyme, and oregano, to taste)
  • Chili flakes (optional, to taste)
  • 1/4 cup beef broth (or vegetable broth)
  • Fresh parsley (for garnish)

Instructions

  1. Wash the potatoes thoroughly. If they're small, leave them whole; if larger, cut them into roughly 1-inch cubes.
  2. In a medium bowl, drizzle the potatoes with about 1 tablespoon of olive oil, a good pinch of salt, pepper, and half of your onion powder and paprika. Toss them well until they're evenly coated.
  3. Preheat your air fryer to 380°F (195°C). Place the seasoned potatoes in a single layer in the air fryer basket and air fry for 10-12 minutes, shaking the basket halfway through.
  4. While the potatoes are pre-cooking, pat the steak cubes completely dry with paper towels. In a separate bowl, toss the steak with the remaining olive oil, salt, pepper, onion powder, and paprika until well coated.
  5. In a small microwave-safe bowl or saucepan, melt the unsalted butter. Add the minced fresh garlic and stir, then stir in the beef broth.
  6. Carefully add the seasoned steak bites to the air fryer basket with the partially cooked potatoes. Pour about half of your prepared garlic butter mixture evenly over the steak and potatoes and toss to coat.
  7. Return the basket to the air fryer and continue to air fry at 380°F (195°C) for another 8-12 minutes, shaking the basket and flipping the steak bites halfway through.
  8. Once cooked, remove the steak and potatoes from the air fryer basket and transfer them to a serving dish. Pour the remaining garlic butter mixture over everything and garnish with fresh chopped parsley. Serve immediately.
