Sausage Egg Cheese Breakfast Roll-Ups: A Delicious and Easy Morning Recipe

  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup cooked sausage, crumbled
  • 6 large flour tortillas (10-inch size)
  • 2 tablespoons butter
  • Optional: salsa or hot sauce for serving

Instructions

  1. In a large mixing bowl, crack the 6 large eggs. Use a whisk to break up the yolks and mix everything together smoothly.
  2. Add 1/4 cup of milk to the eggs for fluffiness and creaminess.
  3. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Adjust seasoning to taste.
  4. Whisk until well combined and slightly frothy (about 1-2 minutes).
  5. In a skillet over medium heat, add the crumbled sausage. If using pre-cooked sausage, just heat it through.
  6. Cook for about 5-7 minutes, stirring occasionally, until browned and fully cooked (internal temperature of 160°F/71°C for raw sausage).
  7. Remove from skillet and set aside on a plate lined with paper towels to absorb excess grease.
  8. In the same skillet, reduce heat to medium-low and add 1 tablespoon of butter. Let it melt and coat the skillet.
  9. Pour the egg mixture into the skillet. Let it sit for a few seconds before stirring.
  10. Gently stir the eggs with a spatula, pushing from the edges toward the center. Cook for about 3-5 minutes until just set but slightly runny.
  11. Remove from heat and stir in the cooked sausage and 1 cup of shredded cheddar cheese until melted and well combined.
  12. Lay out the 6 large flour tortillas on a clean surface.
  13. Evenly distribute the egg, sausage, and cheese mixture onto the center of each tortilla (about 1/3 to 1/2 cup of filling per tortilla).
  14. Fold in the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
  15. Repeat for all tortillas until all roll-ups are ready.
  16. In the same skillet (or a clean one), add the remaining 1 tablespoon of butter and heat over medium heat.
  17. Once melted and bubbling, place the roll-ups seam side down in the skillet. Cook in batches if necessary.
  18. Cook for about 2-3 minutes on each side until golden brown and crispy. Use tongs to flip carefully.
  19. Remove from skillet and place on a plate lined with paper towels to absorb excess butter.
