Roasted Tomato Garlic Pasta: A Delicious and Easy Recipe to Try

This Roasted Tomato Garlic Pasta features sweet roasted cherry tomatoes and mellow garlic, tossed with al dente pasta, fresh basil, and Parmesan cheese. It’s a flavorful, simple dish perfect for any occasion, ready in under an hour. Enjoy it with crusty bread or a fresh salad!

  • 1 pound of cherry tomatoes
  • 1 head of garlic
  • 3 tablespoons of olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 pound of pasta (spaghetti or your choice)
  • 1/2 teaspoon of red pepper flakes (optional)
  • 1/2 cup of fresh basil leaves, chopped
  • 1/2 cup of grated Parmesan cheese
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cherry tomatoes under cold water and pat them dry. Place them in a large mixing bowl.
  3. Slice off the top of the head of garlic to expose the cloves.
  4. Drizzle 2 tablespoons of olive oil over the tomatoes, adding salt, pepper, and red pepper flakes if desired. Toss to coat.
  5. Spread the tomatoes on a baking sheet lined with parchment paper.
  6. Wrap the garlic head in aluminum foil, drizzling a little olive oil over the exposed cloves before sealing.
  7. Roast the tomatoes and garlic in the oven for 25-30 minutes until the tomatoes are blistered and the garlic is soft.
  8. While the tomatoes and garlic roast, bring a large pot of salted water to a boil.
  9. Add the pasta and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
  10. Reserve about 1 cup of the pasta cooking water before draining the pasta. Do not rinse.
  11. After roasting, let the tomatoes and garlic cool for a few minutes.
  12. Squeeze the roasted garlic cloves into a large mixing bowl.
  13. Add the roasted tomatoes to the bowl, scraping in any juices from the baking sheet.
  14. Gently mash the tomatoes and garlic together with a fork or potato masher for a chunky sauce.
  15. Stir in the chopped basil, lemon juice, and remaining tablespoon of olive oil.
  16. Add the drained pasta to the bowl and toss to coat. If needed, add reserved pasta water gradually until the desired consistency is reached.
  17. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
  18. Serve in bowls, garnishing with grated Parmesan cheese and additional fresh basil.
  19. Drizzle with more olive oil before serving for added richness.
  20. Enjoy with crusty bread or a fresh salad!
