  • 2 pounds of Yukon Gold potatoes
  • 1 head of garlic
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • Salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and caramelized. Let cool, then squeeze the cloves into a bowl and set aside.
  2. Peel and cut the Yukon Gold potatoes into 1-2 inch chunks. Place in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
  3. Drain the potatoes in a colander and let sit for a minute. Return to the pot over low heat for a minute to dry out. Mash the potatoes to your desired consistency.
  4. Add the roasted garlic to the mashed potatoes. In a small saucepan, heat the heavy cream and butter over low heat until melted. Pour this mixture into the potatoes and stir gently to combine. Season with salt and pepper to taste.
  5. Transfer the mashed potatoes to a serving bowl. For an extra touch, create a well in the center and add a pat of butter. Garnish with chopped chives or parsley before serving.
