  • 1 cup Powdered Sugar (Confectioners' Sugar)
  • 1 teaspoon Vanilla Extract
  • 12 teaspoons Pumpkin Spice Blend
  • 1 can Sweetened Condensed Milk (14 oz)
  • 1 cup Chopped Pecans or Walnuts (optional)
  • Caramel Sauce (optional, for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the yellow cake mix, canned pumpkin puree, large eggs, vegetable oil, and water. Beat on low speed for 30 seconds, then increase to medium speed and beat for 2 minutes.
  3. In a separate medium bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and 1-2 teaspoons of pumpkin spice blend. Beat until smooth and creamy.
  4. Pour the pumpkin cake batter evenly into the prepared baking pan. Dollop spoonfuls of the cream cheese mixture randomly over the cake batter.
  5. Using a knife or skewer, gently swirl the cream cheese into the pumpkin cake batter. Sprinkle the chopped pecans or walnuts evenly over the top.
  6. Bake for 45-55 minutes, or until a wooden skewer inserted into the cake comes out clean.
  7. While the cake is still hot, poke holes all over the cake with a wooden spoon handle, spacing them about an inch apart.
  8. Slowly pour the entire can of sweetened condensed milk evenly over the hot, poked cake. Let it sit for a few minutes.
  9. Let the cake cool completely on a wire rack at room temperature, then cover and refrigerate for at least 2-3 hours or overnight.
  10. Once chilled, slice into squares and drizzle with caramel sauce if desired.
