This roasted pork tenderloin is marinated in a delicious mix of garlic, herbs, and honey, then seared and roasted with vegetables for a juicy, tender dish that’s perfect for any occasion.

  • 1.5 to 2 pounds pork tenderloin
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • Optional: vegetables for roasting (carrots, potatoes, onions, etc.)

Instructions

  1. In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, Dijon mustard, honey, salt, and pepper. Mix well.
  2. In a large resealable plastic bag or shallow dish, add the pork tenderloin and pour the marinade over it, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight.
  3. Preheat your oven to 400°F (200°C).
  4. If using vegetables, wash and chop them into even-sized pieces. Toss with olive oil, salt, and pepper, and set aside.
  5. In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat.
  6. Add the marinated pork tenderloin and sear for about 3-4 minutes on each side until browned.
  7. Remove from heat and arrange vegetables around the pork in the skillet.
  8. Pour 1 cup of chicken broth into the skillet and drizzle 1 tablespoon of balsamic vinegar over the pork and vegetables.
  9. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Baste halfway through with pan juices.
  10. Remove the skillet from the oven and transfer the pork to a cutting board. Cover loosely with aluminum foil and let it rest for about 10 minutes.
  11. While the pork rests, use the drippings in the skillet to create a quick sauce. (Optional: whisk in a bit of flour or cornstarch for thickness if desired.)
