This Peach Caprese Salad features juicy peaches, creamy mozzarella, and fresh basil, all drizzled with olive oil and balsamic vinegar. It’s a light and flavorful dish, perfect for summer gatherings or as a refreshing side.

Ingredients

Scale
  • 4 ripe peaches, sliced
  • 8 ounces fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt, to taste
  • Pepper, to taste
  • Optional: 1 tablespoon honey for drizzling

Instructions

  1. Choose ripe peaches that are slightly soft to the touch. Wash them thoroughly under cold water.
  2. Cut the peaches in half, remove the pit, and slice into wedges or rounds about 1/4-inch thick.
  3. Slice the fresh mozzarella cheese into rounds similar in thickness to the peach slices.
  4. Rinse the basil leaves under cold water and pat dry. Leave whole or tear into smaller pieces.
  5. On a serving platter or individual plates, layer a slice of peach, followed by a slice of mozzarella, and a basil leaf. Repeat until all ingredients are used.
  6. Generously drizzle extra virgin olive oil over the assembled salad.
  7. Drizzle balsamic vinegar over the salad, or use balsamic glaze for a sweeter touch.
  8. Sprinkle with salt and freshly cracked pepper to enhance flavors.
  9. Drizzle honey over the top for added sweetness if desired.
  10. Add extra basil leaves on top for garnish.
  11. Let the salad sit for 10-15 minutes at room temperature or refrigerate for 30 minutes before serving.
  12. Serve immediately as a refreshing appetizer or side dish, perfect with grilled meats or seafood.
