Instructions

  1. In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Once hot, add diced onion and cook until translucent, about 3-4 minutes.
  2. Next, add in your chicken pieces. Season with salt and pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from the pot and set aside.
  3. In the same pot, add your carrots, celery, and any other vegetables you're using. Sauté for about 5-6 minutes until they begin to soften.
