Ingredients

Instructions

  1. Start by washing and chopping your fresh spinach. If you're using roasted red peppers and artichokes from a jar, drain them well and slice them into smaller pieces.
  2. In a bowl, combine the spinach, roasted red peppers, artichokes, crumbled feta, and a sprinkle of your chosen herbs. Mix everything gently until well combined.
  3. Take two slices of bread and spread a thin layer of olive oil or butter on one side of each slice. On the unbuttered side, generously layer the veggie and feta mixture. Top it with another slice of bread, ensuring the buttered side is facing up.
  4. Heat a skillet over medium heat. Once hot, place the sandwich in the skillet and grill for about 3-4 minutes, or until the bread is golden brown. Carefully flip the sandwich and grill the other side for another 3-4 minutes, ensuring the cheese is melting and the bread is crispy.
