  • 1 tablespoon of fresh lemon juice
  • Fresh herbs (such as thyme, rosemary, or basil) for garnish
  • Salt and pepper to taste

Instructions

  1. Remove the feta cheese from its packaging. If packed in brine, rinse under cold water and pat dry.
  2. Cut the feta into cubes or leave it whole.
  3. In a medium bowl, combine the olive oil, sliced garlic, dried oregano, red pepper flakes, lemon zest, and lemon juice. Season with salt and pepper to taste.
  4. In a clean, airtight container or glass jar, place the feta cheese and pour the marinade over it, ensuring all pieces are coated.
  5. Add fresh herbs to the container for extra flavor.
  6. Seal the container tightly and refrigerate for at least 24 hours, preferably 3-5 days, shaking gently daily to redistribute the marinade.
