  • Half-and-Half (optional substitution)

  • Low-Sodium Chicken Broth
  • Vegetable Broth (optional substitution)
  • Fresh Garlic, minced
  • Italian Seasoning
  • Red Pepper Flakes (optional)
  • Freshly Grated Parmesan Cheese

Instructions

  1. Pat your boneless, skinless chicken thighs (or breasts) dry with paper towels. Season them generously on both sides with salt and black pepper.
  2. While optional, searing the chicken for a few minutes per side in a hot pan with a tablespoon of olive oil until golden brown is recommended.
  3. Once seared (or simply seasoned, if skipping searing), place the chicken in a single layer at the bottom of your slow cooker insert.
  4. In the same pan you seared the chicken (if applicable), or a small saucepan, add a little more olive oil if needed. Sauté the minced garlic for about 30 seconds until fragrant.
  5. Add the drained and chopped sun-dried tomatoes to the slow cooker around the chicken.
  6. Pour in the low-sodium chicken broth. Sprinkle in the Italian seasoning and red pepper flakes (if using). If you sautéed the garlic, scrape it into the slow cooker along with any flavorful bits from the pan.
  7. Cover the slow cooker with its lid.
  8. Cook on LOW for 3-4 hours or on HIGH for 2-3 hours. The chicken should be incredibly tender and easy to shred with a fork.
  9. Once the chicken is cooked, open the slow cooker. If you plan to shred the chicken, carefully remove it to a cutting board and shred using two forks. Return the shredded chicken to the slow cooker.
  10. Pour in the heavy cream and stir well to combine it with the sauce.
  11. Stir in the freshly grated Parmesan cheese until it's melted and incorporated into the sauce.
  12. Taste the sauce and adjust seasonings as needed.
