  • 1 cup milk

  • 1 cup diced tomatoes (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. In a large mixing bowl, crack the 8 large eggs and add 1 cup of milk. Whisk them together until well combined.
  2. Season the egg mixture with salt, pepper, garlic powder, and onion powder. Adjust the seasoning according to your taste preferences.
  3. In a large skillet, heat a drizzle of olive oil or spray with cooking spray over medium heat. Add the diced onions and bell peppers. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.
  4. Pour the egg mixture into the skillet with the sautéed vegetables. Stir gently with a spatula, allowing the eggs to cook evenly. Scramble the eggs until they are just set but still slightly soft, about 5-7 minutes.
  5. Once the eggs are cooked, remove the skillet from heat and fold in the cooked breakfast sausage (or your choice of meat) and diced tomatoes, if using. Mix until everything is well combined.
  6. Finally, sprinkle in the shredded cheddar cheese and stir until it melts into the warm filling. Set the mixture aside to cool slightly while you prepare the tortillas.
  7. Lay out the 8 large flour tortillas on a clean surface or a large cutting board. Make sure they are warm and pliable; you can microwave them for about 10-15 seconds if they are cold.
  8. Using a large spoon, scoop about 1/2 cup of the egg and filling mixture onto the center of each tortilla. Be careful not to overfill.
  9. Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top, tucking in the sides as you go to create a neat burrito shape. Repeat this process for all tortillas.
  10. Once all burritos are assembled, you can choose to wrap them individually in aluminum foil for easy storage or place them in a large airtight container.

  12. Place the wrapped burritos on a baking sheet and bake for about 15-20 minutes, or until heated through. For a crispy exterior, unwrap them for the last 5 minutes of baking.

  14. To reheat a frozen burrito, microwave it on a microwave-safe plate for about 2-3 minutes, flipping halfway through, or bake it from frozen at 350°F (175°C) for about 30-35 minutes.
