Lemon Butter Pork Chops: A Deliciously Simple Recipe for Dinner

Juicy bone-in pork chops are seared and topped with a vibrant lemon butter sauce infused with garlic and fresh herbs. This elegant yet simple dish is perfect for both weeknight dinners and special occasions.

  • 4 bone-in pork chops (about 1 inch thick)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper. Let them rest at room temperature for 15-20 minutes.
  2. In a medium saucepan, melt 4 tablespoons of unsalted butter over medium heat.
  3. Once the butter is melted, add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the lemon zest and juice to the saucepan, stirring to combine.
  5. Toss in the fresh thyme and rosemary, stirring to combine. Let it simmer for another minute.
  6. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  7. Place the pork chops in the skillet and sear for 4-5 minutes on one side without moving them.
  8. Flip the pork chops, reduce heat to medium, and pour half of the lemon butter sauce over them. Cook for another 4-5 minutes, or until the internal temperature reaches 145°F (63°C).
  9. Baste the pork chops with the sauce in the skillet while they cook.
  10. Remove the pork chops from the skillet and cover loosely with aluminum foil. Let them rest for about 5 minutes.
  11. Place the pork chops on serving plates.
  12. Spoon the remaining lemon butter sauce over the pork chops.
  13. Sprinkle chopped fresh parsley over the top.
  14. Serve with your favorite sides, such as roasted vegetables or creamy mashed potatoes.

  • Bone-in pork chops are recommended for juiciness and flavor, but boneless chops can be used with adjusted cooking times.
