  • ½ cup healthy oil (like avocado oil or light olive oil, or melted coconut oil)
  • 2 large eggs (room temperature)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for optional glaze)
  • 12 tablespoons fresh lemon juice (for optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by lightly greasing it and flouring it, or lining it with parchment paper.
  2. In a large bowl, whisk together the dry ingredients: flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate medium bowl, whisk together the wet ingredients: Greek yogurt, healthy oil, eggs, fresh lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients and gently fold until just combined, being careful not to overmix.
  5. Scrape the batter into the prepared loaf pan and smooth the top. Bake for 45-55 minutes, or until a skewer inserted into the center comes out clean.
