  • 100g unsalted butter, melted
  • 300g semi-sweet chocolate
  • 600g cream cheese
  • 150g granulated sugar
  • Zest of 2 oranges
  • Juice of 2 oranges

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, pulse the digestive biscuits until they resemble fine crumbs.
  3. In a mixing bowl, combine the crumbs with melted butter until fully coated.
  4. Press the mixture firmly into the bottom of a springform pan, making sure it’s even.
  5. Bake for about 10 minutes, then remove and let it cool.
  6. In a microwave-safe bowl, melt the semi-sweet chocolate in 30-second intervals, stirring in between until smooth. Let it cool slightly.
  7. In a large mixing bowl, beat the cream cheese until smooth.
  8. Gradually add the granulated sugar, mixing until well combined.
  9. Add in the orange zest and juice, followed by the melted chocolate, and mix until everything is perfectly blended.
  10. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  11. Pour the cheesecake filling over the cooled crust.
  12. Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.
  13. Once baked, turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for about an hour.
  14. After it has cooled, refrigerate the cheesecake for at least four hours, or overnight for the best flavor and texture.
