  • 1 (4-5 pound) turkey breast, bone-in and skin-on
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 lemon, zested and juiced
  • 1 cup low-sodium chicken broth
  • Optional: fresh herbs for garnish (rosemary, thyme, or parsley)

Instructions

  1. In a medium bowl, combine olive oil, minced garlic, chopped rosemary, thyme, and sage. Mix well. Add salt, black pepper, lemon zest, and lemon juice. Stir until cohesive.
  2. Pat the turkey breast dry with paper towels. Gently loosen the skin from the turkey breast to create a pocket. Rub half of the herb marinade under the skin and the remaining marinade all over the outside of the turkey.
  3. Place the coated turkey in a resealable plastic bag or covered dish. Marinate in the refrigerator for at least 2 hours, preferably overnight.
  4. Preheat the oven to 325°F (165°C). Let the turkey sit at room temperature for 30 minutes before roasting. Pour chicken broth into a roasting pan.
  5. Place the turkey breast, skin side up, on a rack in the roasting pan. Insert a meat thermometer into the thickest part of the breast. Roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C), basting every 30 minutes.
  6. Once cooked, remove the turkey from the oven and cover loosely with aluminum foil. Let it rest for 20-30 minutes.
  7. Remove the skin if desired, and slice the breast meat against the grain. Arrange on a serving platter and drizzle with pan juices if desired.
  8. Serve with sides like mashed potatoes, green beans, or salad. Garnish with fresh herbs.
  9. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for longer storage.
  10. For gravy, place the roasting pan on the stovetop over medium heat. Skim off excess fat and whisk in flour or cornstarch to thicken.
