Instructions

  1. First things first, bring a large pot of heavily salted water to a rolling boil. Toss in your elbow macaroni and cook it according to package directions, aiming for just past al dente – tender but with a good chew. This usually takes about 7-8 minutes.
  2. Once it’s perfectly cooked, drain the pasta thoroughly in a colander. Rinse it briefly under cold water to stop the cooking process and remove excess starch. Let it drain really well, shaking out as much water as possible. Then, spread it out on a baking sheet to cool completely while you prep the other ingredients.
  3. While your pasta is cooling, heat a large skillet over medium-high heat. Add your finely diced beef bacon and cook, stirring occasionally, until it's super crispy and beautifully browned. This usually takes about 8-10 minutes.
  4. Once crispy, use a slotted spoon to transfer the beef bacon bits to a plate lined with paper towels to drain any excess fat. Reserve about a tablespoon of the rendered beef bacon fat in the skillet.
  5. Now, finely chop your celery, red onion, dill pickles, and roasted red bell pepper. Mince your fresh parsley and chives as well.
