Ingredients

Scale
  • 2 whole branzino fish, cleaned and scaled
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 lemon, sliced
  • Fresh herbs (such as parsley or dill), for garnish
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 23 fresh red chiles, chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • Fresh cilantro, for garnish

Instructions

  1. In a small saucepan, heat 2 tablespoons of olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.
  3. Toss in the chopped fresh chiles and continue to sauté for another 2-3 minutes to release their flavors.
  4. Stir in the fish sauce, soy sauce, lime juice, and honey (or sugar). Mix well and let it simmer for about 5 minutes.
  5. Remove from heat and drizzle in the sesame oil. Stir to combine and set aside to cool slightly.
  6. Rinse the fish under cold water and pat them dry with paper towels.
  7. Make 2-3 diagonal slashes on each side of the fish to help them cook evenly.
  8. Rub the fish inside and out with olive oil, ensuring they are well coated.
  9. Season generously with salt and pepper, both inside the cavity and on the skin.
  10. Stuff the cavity of each fish with lemon slices and a few sprigs of fresh herbs.
  11. Preheat your grill to medium-high heat.
  12. Lightly oil the grates to prevent sticking.
  13. Place the branzino on the grill diagonally across the grates.
  14. Grill for about 6-8 minutes on one side, then carefully flip and grill for another 6-8 minutes. The fish is done when the flesh is opaque and flakes easily with a fork.
  15. Carefully remove the branzino from the grill and place them on a serving platter.
  16. Drizzle the prepared chile sauce generously over the fish and serve some on the side.
  17. Garnish with fresh cilantro and additional lemon slices.
  18. Serve immediately while the fish is still warm.

Notes

  • For best results, use the freshest branzino available.
  • Consider using a fish basket or grill mat to make flipping easier.
  • Customize the chile sauce to your liking by adjusting the heat level or adding coconut milk for creaminess.
  • Pair with a light salad or grilled vegetables for a complete meal.
