Grilled Bell Peppers Burrata: A Deliciously Creamy Summer Delight

  • 4 large bell peppers (red, yellow, or orange)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 cup fresh burrata cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic glaze (optional)
  • Crusty bread or crackers for serving

Instructions

  1. Wash the bell peppers under cold water to remove any dirt or residue.
  2. Slice each pepper in half lengthwise and remove the seeds and white pith.
  3. Place the halved peppers on a cutting board, skin side down.
  4. In a small bowl, mix together the olive oil, sea salt, black pepper, garlic powder, and dried oregano.
  5. Coat the inside of each pepper half with the marinade using a brush or your hands.
  6. Preheat your grill to medium-high heat (around 400°F or 200°C).
  7. Place the bell pepper halves skin side down directly on the grill grates.
  8. Grill for about 5-7 minutes until they start to char and soften.
  9. Flip the peppers over and grill for an additional 3-5 minutes.
  10. Remove the peppers from the grill and set aside to cool slightly.
  11. Take the burrata cheese out of its packaging and drain any excess liquid.
  12. Slice the burrata in half to reveal the creamy interior.
  13. Arrange the burrata on a serving platter or individual plates, surrounded by the grilled peppers.
  14. Place each grilled bell pepper half around the burrata on the serving platter.
  15. Sprinkle the chopped fresh basil over the burrata and peppers.
  16. Drizzle balsamic glaze over the dish if using.
  17. Optionally, sprinkle a little more sea salt and black pepper on top.
  18. Serve with crusty bread or crackers for scooping.
