- 3 cups Strong Bread Flour
- 1 teaspoon Fine Sea Salt
- 1 1/4 cups Warm Water (105-115°F)
- 1 tablespoon Instant Yeast
- 1/4 cup Good Quality Extra Virgin Olive Oil (plus more for drizzling)
- 4–6 cloves Fresh Garlic (minced)
- 1 cup Parmesan Cheese (freshly grated)
- Optional: small handful of Shredded Mozzarella or Provolone
- In a large mixing bowl, whisk together the bread flour and fine sea salt until well combined.
- In a separate medium bowl, combine the warm water, instant yeast, and 1 tablespoon of extra virgin olive oil.
- Pour the wet mixture into the dry ingredients and mix with a sturdy spoon or your hands until a shaggy, cohesive dough forms.
- Cover the bowl tightly with plastic wrap and let it rise at room temperature for 1.5-2 hours, or until it has roughly doubled in size.
- Generously drizzle about 1/4 cup of good quality extra virgin olive oil into a 9×13 inch baking pan.
- Gently transfer the risen dough into the oiled pan, flipping it over once to ensure both sides are coated with olive oil.
- Using your fingertips, gently dimple and stretch the dough to fill the pan. If the dough resists stretching, let it rest for 10-15 minutes, then continue stretching.
- In a small bowl, combine the minced fresh garlic with another 2-3 tablespoons of extra virgin olive oil.
- Drizzle the garlic-infused oil evenly over the dimpled focaccia dough.
- Generously sprinkle all of your freshly grated Parmesan cheese over the entire surface. If using, sprinkle on the shredded mozzarella or provolone now.
- Loosely cover the pan with plastic wrap or a clean kitchen towel and let the focaccia rise in a warm spot for another 30-45 minutes.
- Preheat your oven to 425°F (220°C) during the last 15 minutes of this rise.
- Place the focaccia in the preheated oven and bake for 20-28 minutes until the top is golden brown and the cheese is bubbly.
- Immediately transfer the focaccia to a wire rack to cool for about 10-15 minutes before slicing into squares or rectangles.
