This Garlic Mushrooms Cauliflower Skillet is a quick and flavorful dish featuring tender cauliflower and savory mushrooms sautéed with aromatic garlic.   • 1 medium head of cauliflower, cut into small florets
  • 8 ounces of mushrooms, sliced (cremini or button mushrooms recommended)
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter (optional for extra richness)
  • 1 teaspoon of dried thyme (or 1 tablespoon of fresh thyme)
  • Salt and pepper to taste
  • 1 tablespoon of lemon juice (freshly squeezed)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the cauliflower thoroughly under cold water to remove any dirt or impurities.
  2. Cut the cauliflower into small, bite-sized florets for even cooking.
  3. Optionally, steam the florets for about 3-4 minutes until slightly tender to speed up the cooking process.
  4. Slice the mushrooms evenly, aiming for about 1/4 inch thick slices for uniform cooking.
  5. Set the sliced mushrooms aside. If using dried thyme, crush it slightly to release more flavor.
  6. In a large non-stick skillet, heat the olive oil over medium heat.
  7. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  8. Add the sliced mushrooms to the skillet, stirring to coat them in the garlic oil. Cook for about 5-7 minutes until browned and moisture is released.
  9. Add the cauliflower florets to the skillet, stirring to combine. Season with salt, pepper, and thyme (start with 1/2 teaspoon of salt).
  10. Cover the skillet and cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  11. If using butter, add it during the last couple of minutes of cooking for added richness.
  12. Once the cauliflower is tender and mushrooms are caramelized, remove the lid and stir well.
  13. Drizzle lemon juice over the skillet to brighten the flavors. Adjust seasoning if necessary.
  14. Remove from heat and sprinkle with chopped fresh parsley for garnish.
